Innkeeper's Favorite: Heavenly Hots

Light and fluffy sour cream pancakes with a hint of nutmeg

(makes about 18 pancakes)


4 whole eggs

½ tsp. salt

1 ½ tsp. baking soda

1 cup white flour

2 tbls. Sugar

2 cup sour cream

½ tsp. nutmeg (optional)


Combine wet ingredients in one bowl and sift dry together in another.  Lightly mix dry ingredients into wet.  Let set for 2 to 3 minutes, and then pour on a hot griddle or heavy weight frying pan in 3-4 inch circles.  Flip when bubbles appear on the top, and brown the other side.  Serve with maple syrup or your favorite jam.  Enjoy!
